Sauerkraut story...
As every old Fox knows sauerkraut is probably one of the oldest foods on earth. In fact it is said that Genghis Khan brought the art of lacto fermenting vegetables from Central Asia to Russia when the Mongols were conquering. This would be around 1237. This crunchy, juicy goodness has been a regular table guest for many generations of my people. Sad to say that modern food manufacturers can or jar their kraut using heat and vinegar instead of natural fermentation to sour it. Our sauerkraut made traditionally by hand , packed into jars with brine solution, then refrigerated to preserve the vitamins, enzymes, and beneficial bacteria WITHOUT any HEAT. LIVE sauerkraut also has a distinctive flavor very different from the canned version.
