Question:
Is your product organic?
Answer:
Mother Goosey's Sauerkraut is not certified organic however we use only organic vegetable and fruit ingredients.
Organic cabbage, organic carrots, organic apples.
And 100% real sea salt. Nothing else!
Question:
I bought a jar of sauerkraut and it's fizzy and lid is bulged, is it still okay to eat?
Answer:
Yes, it's absolutely safe to eat! Our sauerkraut is naturally fermented and we don’t pasteurize it, so living organisms are present. Some batches are more active than others and have residual activity. This activity includes some creation of CO2, which will make the product bubbly and the lid bulge. When the kraut is out of the refrigerator, it will continue to ferment!
Question:
Why Sauerkraut Becomes More Acidic Over Time?
Answer:
The process of making sauerkraut begins with an alkaline brine, usually just salt plus the natural juices of the cabbage. The salt kills off harmful bacteria, but salt-tolerant beneficial bacteria called Lactobacilli survive and cause fermentation to begin. During the fermentation process, the Lactobacilli convert the sauerkraut from an alkaline environment to an acidic one. Because of this active fermentation, the pH of recently made sauerkraut is lower than that which has had several days or weeks to ferment.
